These Paleo Chocolate Chip Breakfast Cookies are crazy tasty. You could eat them as a snack or even for breakfast! Although I don’t RECOMMEND eating them for breakfast every day. (If you want some great breakfast ideas, check out this article.)

BUT if you’re in a pinch with getting everyone dressed and trying to nurse a baby these cookies are perfect.

Paleo Chocolate Chip Breakfast Cookie

 

  • 1.5 cup almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp pink sea salt
  • 2 TBS coconut oil, softened
  • 2 TBS maple syrup
  • 1/2 tsp vanilla
  • 2 eggs
  • 1/2 cup Enjoy Life Dark Chocolate Chips
  1. Preheat the oven to 350.

  2. Whisk the almond flour, baking soda, and sea salt (dry ingredients) together in a medium mixing bowl. Set aside.

  3. Using stand or hand mixer, mix the coconut oil, maple syrup, vanilla, and eggs together in a large bowl until well blended (about 30 seconds).

  4. Slowly add dry ingredients to wet ingredients and mix thoroughly.

  5. Add the chocolate chips to the mixture.

  6. Cover baking sheet with parchment paper. Spoon 1-2 TBS of cookie mixture onto the cookie sheet. If the dough is too sticky to work with, place in the fridge for up to 30 minutes.

  7. Bake for 6 minutes. Flatten each cookie with a spatula and return to the oven to cook for 7 minutes.

  8. Once cooked, let cookies cool on drying rack for 10 minutes. Makes 12 cookies.
