These Paleo Chocolate Chip Breakfast Cookies are crazy tasty. You could eat them as a snack or even for breakfast! Although I don’t RECOMMEND eating them for breakfast every day. (If you want some great breakfast ideas, check out this article.)
BUT if you’re in a pinch with getting everyone dressed and trying to nurse a baby these cookies are perfect.
I speak from experience…
The point is that they’re really delicious and nutritious! Enjoy!
Paleo Chocolate Chip Breakfast Cookie
- 1.5 cup almond flour
- 1/4 tsp baking soda
- 1/4 tsp pink sea salt
- 2 TBS coconut oil, softened
- 2 TBS maple syrup
- 1/2 tsp vanilla
- 2 eggs
- 1/2 cup Enjoy Life Dark Chocolate Chips
-
Preheat the oven to 350.
-
Whisk the almond flour, baking soda, and sea salt (dry ingredients) together in a medium mixing bowl. Set aside.
-
Using stand or hand mixer, mix the coconut oil, maple syrup, vanilla, and eggs together in a large bowl until well blended (about 30 seconds).
-
Slowly add dry ingredients to wet ingredients and mix thoroughly.
-
Add the chocolate chips to the mixture.
-
Cover baking sheet with parchment paper. Spoon 1-2 TBS of cookie mixture onto the cookie sheet. If the dough is too sticky to work with, place in the fridge for up to 30 minutes.
-
Bake for 6 minutes. Flatten each cookie with a spatula and return to the oven to cook for 7 minutes.
-
Once cooked, let cookies cool on drying rack for 10 minutes. Makes 12 cookies.
