This recipe is awesome because it checks the box for so many nutritional preferences. Without any modification, it’s Keto, Paleo, and Whole30. 

Oh, and delicious.

Siete TortillasYou can eat these like a traditional fajita with a tortilla. If you need a tortilla that checks the Paleo box, I recommend Siete Tortillas. They are more expensive than what you would pick up at the grocery store, so I use them sparingly. The good news is that Siete Tortillas freeze well. I keep a stash in the freezer for when I need a fix!

I usually make a Fajita Salad. I place the meat/veggie mix over mixed greens and add salsa, guacamole, and jalapeños. Simple, tasty, and it fits my macros nicely.

Ingredients

12 ounces skirt steak, trimmed and thinly sliced
1 green pepper, sliced
1 red pepper, sliced
½ yellow onion, sliced
2 Tbsp Avocado Oil, divided
1 tsp salt, divided
½ tsp black pepper, divided
½ tsp chipotle powder
1 tsp chili powder
1 tsp cumin
1 lime
1 Tbsp fresh cilantro leaves, chopped
Instructions

Mix 1 Tbsp avocado oil, ½ tsp salt, ¼ tsp black pepper, ½ tsp chipotle powder, 1 tsp chili powder, and 1 tsp cumin in a small bowl. Place the steak in a medium-sized bowl. Toss spice and oil mix with the beef. Set aside.
Mix 1 Tbsp avocado oil, ½ tsp salt, and ¼ tsp black pepper in a different bowl. Place peppers and onions in a medium-sized bowl. Toss spice and oil mix with the veggies.
On a large baking sheet, spread the pepper and onion mix evenly. Broil for 5 minutes.
Remove the baking sheet from the oven and push the peppers to the edges. Place steak in the middle of the sheet. Broil for 5 minutes.
Remove the baking sheet from the oven. Using a metal spatula, turn everything and mix. Broil for 5 minutes.
Remove from the oven. Sprinkle with the fresh cilantro and serve with a side of sliced lime.

Notes
